Octavia DSG keeps returning to Normal Mode

You are getting confused.... I am well aware of the "D" in the display and the D/S setting on the selector vs the Mode... I am talking about the Drive setting under the vRS mode settings. In "Individual" mode you can customise the various aspects of the car, "Steering", "DCC", "Air conditioning", "Sound generator" and "Drive". Drive dictates the drive characteristics and the mode the DSG gearbox is in, so if set to Sports then I see an "S" in the display and it sets the DSG to Sport. If I set it to Normal or Comfort then it is "D" in the display and the gearbox is Normal Drive selection. If I set it to Eco then I see "E" in the display. This sets the DSG to Eco and impacts the DSG so that it shifts earlier and coasts when I take my foot off the accelerator. If I have Eco set then when I turn off the ignition and then re-start the car the DSG returns to "D", even though my Driving Mode Selection is still set to "Individual" and has Drive set to Eco, i.e. my DSG is back to normal. If I re-select the "Individual" mode again it sets the DSG back to "E" and I get the Eco behaviour. -

I have noticed that on my FL vrs I have set my Individual mode to Drive = eco and DCC = comfort. For some reason I start my car and even though it says I'm running Individual mode the Eco setting is ignored and runs in Normal (shows D in display), although it engages all of my other Individual settings happily (DCC etc). If I re-select Individual again on the screen it switches the drive to eco. I figure it's a software bug as if it was engine temp related then it wouldn't allow my to enable it manually. -
I treated my new car to some Gtechniq I1 so hopefully any liquids will be repelled. Failing that plastic sheeting will have to suffice

What I don't get is why the standard seating in a 2014 mk3 had Alcantara leather when the FL doesn't. Seems like a downgrade.

The armrest is faux leather, as is the back of the front seats weirdly

Yeah I'm looking forward to giving it the beans. Only another few hundred miles to go... Luckily I've got a long drive next weekend so that'll help get me close to the end of breaking it in

It does seem to be a bit of a lottery. Mine took 15 weeks, others on here have been waiting longer so expect the worst and you may be pleasantly surprised.
