This has probably been asked a million times but can't find what I'm looking for, so will the front and rear seats out of a 2001 3 door Polo fit straight into a mk1 Fabia?

Don't think so. That's a Polo 6n, you need a Polo 9n or 9n3. The floor pan is different I believe.

Is there much modification needed? TT seats are different but most people manage to put them in.

Do they? I've been talking to PastyBoy about how hard it is to fit the Octy VRS interior ans from what he's said it's not to hard so going to probably try fit some Octy VRS seat

Yup, 9N only.  I think that is roughly 2004/2005+
