What By the book differentes does turning this off?

I don't know whether it's just me Thinking it feels to have more responsiveness with the throttle, and steering feels lighter.

Pressing the button just turns of the traction control part of the system.

But if wheel spin is detected power can be cut from the engine, 

which is why many switch Traction Control off.

ESP is more than just traction control (ASR).

ESP, as far as I know will activate a wheel brake(s) if a skid is detected to try and regain control.

ASR only regulates engine rpm to lessen wheel spin.

But the only way to disable the full esp system is to either pull the relevant fuses or have the whole system coded out with VCDS or similar. Pressing the esp off button only effects the asr component of the esp.
