I am thinking of replacing std symphony stereo with a sat nav/HU (preferably Pioneer/JVC). Just wondering what is the use of canbus and it it specific to HU model or car model, like mine is Superb 53 plate.

I am getting confused with the install instructions, any help would be great.

I cannot give specific models etc, but with regards to cab-bus and radio's its usually the way to turn the radio on/off You will find on later cars (with canbus) there is no Accessory position (well electrical supply) so if you change the radio you cannot switch it on/off.

There is devices that do the conversion, (do a search and or ask at a good car radio dealership)
