I recently installed a new radiator after the old one had a leak, and suddenly the temperature gauge started acting strange. Last time, it stayed low for about 20-25 min drive (at a traffic jam) and then starting to rise to a dangerous level. I immediately stopped the car, waited 3 min and opened the coolant cap, just a little bit to let some steam off. Started the car and the temp stayed low for the rest of the drive.

I would have thought it was just an air lock tbh.

Just keep an eye on the coolant level and top-up as necesarry. Can take a while for all the air to get out of the system after it has been drained and re-filled.

If it's when stuck in traffic, it is likely your fan temperature switch in the radiator has failed. Common problem, also easy and cheap to change.

Guys it seems it was indeed an air pocket, because the gauge works normally now. However I noticed a serious water leak from a source unknown to me. Every morning I check my coolant status and it gets lower and lower and I have to add some. As I mentioned the radiator is new, engine head had been reapired recently too.
