Was just wondering if anybody on here has changed the thermostat in a 2001 octy vrs and if they had whats involved and how long did it take?

It's not a difficult job

Its fiddly. Some long 1/4" extensions and universal joint plus allen driver. Plus genuine thermostat & new sealing ring & spare coolant.

If you leave the rad cap on you wont have to replace much coolant.

Doesn't take long, half hour or so.

My tips would be- watch the dipstick clip it's easy to snap, and unbolt the metal bracket on the front of the manifold to gain better access
