I have heard it suggested that you may be able to negotiate a better price / greater discount if you buy at the end of a month (or was it end of a quarter?) when some garages may be anxious to meet monthly / quarterly sales targets.

But what about the time of year?  In the case of convertibles, better discounts are likely to be available in spring or summer than in autumn or winter, but are there any seasonal variations with a saloon / estate like the Octavia?

Yep, at the end of the month you might find a dealer who is just short of his targets who will give a really good deal, sometimes selling at a loss. Equally, you might get the opposite if they have already sold enough when they will hold out for a better margin.

For convertibles they'll be really keen to shift anything they have in stock at the mo, but not so not bothered on a factory order. For a standard car there's unlikely to be a seasonal variation.

January should be a good time as the showroom will be quite, but targets still need to be met.

Guys, its also about when the vehicle can be delivered. They need cars out the door to meet targets not orders.
