Simple question, hopefully. Where can I find the service history? I feel I have a book missing with my car as none of the books have pages for service stamps.

All electronic, no service log books now. Skoda keep it all on their systems, some third party mechanics have access to update/see them too. You can ask your dealer for a print out at any point.

My 2017 Monte Carlo is due a service in the next couple of weeks, has 9500 odd miles on the clock, would this be 2nd or 3rd service?

based on years and mileage i'd say it'll be its second. Most the filters/plugs etc. are replaced based on years, mileage or a combination of both and are often subject to "inspection" before being replaced according to the service manuals.

You can get full service information, including access to all workshop manuals and TPI's if you feel so inclined from erWin (yes it looks terrible, but its an official skoda site). It's 7 Euro's for an hours all you can consume access.
