1.2L 2003 engine jumping at full throttle

I'm new hear and I have a mild issue that has been affecting my fabia for a while. 

Essentially when I floor the car, say to get onto a dual carriage way, the engine sort of jumps, making the car lurch forward and back as it goes from full power to no power and back again. 

The car idles fine and works well otherwise, and it does this in every gear. 

I was thinking that it could be the fuel pump/system starving the engine, but I thought I would ask on here to see if anyone else has had this issue. 

Its a 1.2 64hp model, with 132k miles...

 

It used to happen to me on a 2.0 Mk4 VW Jetta I had, never got around the problem because I sold the car before addressing it. Check if the rev counter/tachometer jumps up and down as the car does. Start from servicing the essentials: clean and adapt (via VCDS) the throttle valve, service the EGR (clean the pipes leading to it when you service the throttle valve just in case, though in theory it shouldn't have an effect since you're saying it happens when you "floor" it), check your coils, clean them, verify your spark plugs, check the state/mileage of your consumables (air, fuel, oil filters) renew as needed and clean the manifold absolute pressure sensor, and last but not the least, check the connections at the throttle pedal, clean them and seat them correctly. Do all of this to establish a baseline.
