We have the same problem with my sisters Mk 1 Seat Leon and have tried similar key re-coding as you have and with no luck. I can only conclude the Central Convenience Unit (or at least the remote reciever in it) is broken and suggested to her she goes to a dealership and gets a new CCU fitted and matched to her keys. Expensive solution but I can't think of anything else that would be causing the problem. :(

It was suggested in the thread (but not tried by the look of it) that you erase the keys first, 46,10 channel 00 and the code them in on channel 01. There is no other way of doing it if neither remotes work.

I've been told we didn't do the above as this would wipe the memory of the 2 keys that start the car, and I don't have the 4 digit SKC code to login to the immobiliser to reprogram the keys to the car, and therefore would not be able to start it.

Is there a way of finding out this code?? I believe it should be on a tag on the key, but as the car is a few years old this has obviously been lost at some point.

Yes you can get the SKC code with VAG Tacho, they are quite correct that you can't program the key using VCDS without the SKC code.
