Something I've always wondered. If I was about to have a crash and in my panic I somehow turned off the ignition and removed the key would the air bag still deploy?

Yes, as the system remain active for a few seconds after the key is removed. Designed like this incase massive impact destroys electrical circuits feeding the airbag.

Probably academic in any case (based on having actually crashed a car).
