With my new slims 4gb on board hard drive seemingly not operational, will buying a 120 or 250gb hard drive and installing it in the hard drive bay bypass the 4gb one and act as the sole hard drive?

The 120/250GB will work perfectly.

If its only for stuff like your profile, gamesaves, and DLC, then you can just use a generic USB key,

By the way if you haven't got a warranty i believe it would have to be one of the new 250gb hard drives as they now fit inside the xbox rather than on top so the old drives aren't compatible.
