It just had a trailing wire aerial which was working nicely inside a big metal shopping centre.

If you ran that along the underside of the top of the dash it would work

If this is their own brand tuner/display device, they were instore at

6v, surely it would need to be 12v to get it to power from the car?

Yes it would , but a stepdown transformer from 12 to 6v is easy and cheap.

Failing that, it runs on batteries as well.

Anyone know a way of connecting it to the standard symphony head unit?

The symphony does have an Aux-in on the back but you need an adaptor to be able to use it. IIRC Blue Spot sell them
