Is there any way to change the trip computer from logging just the current journey (i.e. mpg, average speed etc) and make it log continuously until i reset it, for example, after a fill up.

Yes. When you have the display on mpg or average speed, you will also see a "1" beside it. Press the button on the underside of the stalk and it will change to "2" The "2" display keeps logging until you manually reset it by holding the button on the underside.

thanks very much mate, will be trying that in the morning. the underside ok button is pretty awkward, always seem to stick the wipers on!

Hehe, I always pinch the stalk to press that button, otherwise it's nearly impossible not to move the stalk st the same time.
