Fabia flashing oil light (again) ...

Hi - new forum member - apologies for for any errors etc. Here's the problem -

I have a delightful Fabia Comfort 16v (petrol), 72000 miles first registered 2002. Due its MoT, last month, I took it to a local dealer (previously a Skoda dealer but no longer - it was the dealer where I had purchased the car approx two years ago). The dealer was offering an MoT / service deal and I took him up on it. The car sailed thru' its test and, after it had been serviced, I drove it home (about half a mile from the dealer's). I hardly use the car and it was then left parked up for a couple of weeks. Two weeks after the MoT/service I set off on a local journey and, within a couple of miles, the oil light came on and started flashing. I returned the car to the dealer. Two days later the dealer 'phoned and told me that they couldn't identify this (coincidental) fault. They suggested that I allow them to take the head off so that they could have a better look. I would be responsible for all labour and parts and a cure was not guaranteed. I haven't yet made a decision. Another dealer gave me free advice over the 'phone and suggested that as the car was OK pre service then he suspected the car had been filled with cheap / wrong viscosity oil. Sorry for going on - any suggestions?
