I would be grateful for advice on how to replace the existing dashboard trim with the wood trim.

Does the trim just prise off and if so what is the best tool to use?

If it does prise off, where do you start to prise it - end centre, both at same time?

Any other tips?

I think I used my fingers......but it was well over 2 years ago now.

Do a quick search on this forum, the process has been well described in detail before.

Basically it is simple and just requires a bit of confident force! Start by opening the glovebox, grabbing the trim there and pulling. Incidentally it is best to take off the radio trim first - use a credit card to get that off.
