Also custom mapping can they map the torque down as I'd want to keep torque down to say 250lb's since although the car might be fine I'm a bit hard on cars and don't want to be paying for a new clutch.

Yes, with a custom map although there would be little point. Standard is around 230lb ft. With a reduced torque you would also have a reduced BHP and going that low (250lb ft) you would just be wasting your money.

An off the shelf map or tuning box would be the better option giving you circa 175 BHP and around 290 - 300lb ft.

Oh and no I didn't look at the SEAT.
