Which CR Diesel engine to go for?

We are looking to add to the Skoda stable. I'm looking at 3 or 4 year old Octavias or a Superb. I will mainly be doing motorway driving and I'm looking at the CR diesels. Which one though? Is the 1.6Tdi CR too slow, especially in a Superb? This is making me think one of the 2.0 engines may be better.

Also, when are the DMF and Clutch likely to go one these?

It all depends where your priorities lie and what you want performance wise from it. The 140 and 170 2l engines can do over 50mpg on a run plus you get the extra go when you want it. Best thing for you would be to test drive them all to see which combination suits you best. I know someone with a 1.6 superb and he loves it, but his main priority was fuel economy as he's a high miler but also needed a big boot and room to accomodate his 2 6ft plus teenage sons. The CR engines are more linear in their torque delivery so dmfs shouldn't be a problem providing the previous owner hasn't been trying to accelerate from super low revs.

I do like a bit of "GO" to be fair. I'm currently driving a high mileage, 10 year old, Berlingo HDi. It goes really well to be fair but was bought a for a purpose and now my needs have changed.

1.6 CR is much better than a ten year old 1.9 TDi. I drove mine on a 60 mile round trip today, fairly quickly on hilly B-roads, half of which had four 6' adult males on board (say 300kg+). Finished the journey at 58mpg and wasn't hanging around. Handling on the Octavia is a bit bouncy, but it goes around corners almost as well as our Mk7 Golf GTi. The 1.6 is definitely more refined than the 2.0 as I have also spent lots of time in a new Seat Leon. Power/torque delivery is much more linear than the 2.0 which delivers most of its shove from 1700 to 3000 rpm.
