Probably a stupid question but I’ve recently changed from a Fiesta to a Fabia 1.0 110. Was driving today and noticed that when I put my foot down, it almost has like a 2 step to go full throttle. So just checking if that’s normal on these cars as I didn’t have anything like that on my fiesta.

That's the detent for the speed limiter emergency override. (If you look around the back of the pedal lever you'll see a white bit of plastic sticking out, that provides the resistance.)

 

Yet another thing they left out of the instruction manual.

Also, these are drive by wire, where I would assume the Fiesta was a cable operated accelerator. Might feel a little different.

Nope. It's a kickdown switch effectively, as @ettlz said. The click doesn't actually do anything regarding power output. It's just that the computer needs a way of telling if you're overriding the speed limiter. 

Interestingly there's no physical switch there, the pedal has just the usual G79/G185 spec outputs. As soon as the throttle pedal position goes over 80% (where the detent is placed) the ECU sets a control bit to 1 and the limiter is suspended.

 

This point coincides with 100% of the ECU's normalised throttle pedal travel -- i.e. commands maximum output. You get no more beyond the click -- this figure stays at 100%.

And don't forget, it's a safety thing aimed at keeping you safe! It would be unwise and probably illegal to tamper with it. I suspect the ecu would throw up a major fault error code if somehow you managed to remove it and it would put you in limp mode!

It'll take you a week, then you'll forget its there. If you drive appropriately around town, you won't even know anyway!

You have actually got 100% throttle available at all times BEFORE you get to the detent in all normal driving. It's just that you can't access full throttle if the speed limiter or cruise is operational, with both of those features holding you at a particular preset speed. The detent is a switch that allows you to overide the speed limiter or cruise in an emergency at those times when the throttle is being either fully or partially controlled by the car, and thus not normally allowing you to accelerate beyond a certain speed. So it's easy to get used to, and as said by mrgf, you'll get used to it within hours or days of driving. Why would you not? Most folks don't go around using full throttle all the time...lol!
