I have a Škoda octavia GLX MK1 TDI and i was wondering if a engine like a 2jz, 1jz or maybe some volkswagen VR6 would fit.

The VR6 engine fits. Someone has just done a conversion on their 4x4. It’s a lot of work and you really need to know what you’re doing. I fear that if you’re already asking, then it maybe not for you.

2.8 vr6 out of golf mk4 would be the best option,but it's the easyest to find a complete golf and swap everything out of it in your car.

Physically yes, but you'n need to change the engine, gearbox, EMS and fuel system.

+ driveshafts,and depending on engine he has now,probably gearshift linkage and clutch slave cylinder with hydraulic line...if he has a/c and wants to keep it he needs lower a/c pipe...he needs complete donor car.

and instrument cluster...

 

be a whole lot easier just find a good vr6 for sale...
