Ive got the 1.5 tsi technology version  - looked under the bonnet for the first time to top up the washer juice.... Theres no engine cover?!?!? is that normal????

 

 

Yes, this is normal.

There was a bulletin on some models to remove the engine cover 

There was a full on DVSA safety critical recall to and a Skoda / VW service campaign.   For 2.0 TSI,s.  Nothing for 1.5 TSI,s.    @Woodsy321  there is a small cover with an oil fillet cap in the middle.   Plenty other similar posts. With pictures even.
