Yeti 2013 1.6 TDI intermittent glow plug warning light

Hey guys, as the title says,

Today I went on a drive, mountain drive uphill, and at a half way point, about 5-10 minutes in, the car wouldn't accelerate past 2500rpm and turned on the intermittent glow plug warning light, I pulled over, let the car cool down and after a few minutes, turned it back on, car started up normally, and the warning light was gone. (The car was fully warmed up before the mountain drive)

Also to note on the drive back (around 30km) the car was running fine and no errors, loss of power or anything of such happened.

Curious if anyone has ever encountered such an issue and what was the cause/fix of it, thank you all in advance

That light can cover a lot of "problems". You need to get all the fault codes read.

Also usueful stating what model, age, engine and transmission you have.

It's a Skoda Yeti 2013 1.6 TDI CAYC, transmission is a manual 5 speed
I'll most likely have it looked at soon but I was just curious if anyone has had such an issue pop up

As said it will have stored a code/codes. It sounds like its gone into limp mode and by stopping and starting again has reset itself. My old 1.9tdi used to do similar due to sticking turbo actuator and overboosting. Worse when going up hills like you were. Turned off and on again and back to normal.
