Can't seem to get to the root of the problem with my error messages.

ESC stabilisation error followed by park pilot error and stop start error.

I've had nearly everything done to it, including a new terminal on the battery. New alternator checks out fine. New battery ok. Been to a Skoda dealership and everything checks out. Mechanically, everything is aok, but these errors will not go away. Any help greatly appreciated.

I've had tests done by various garages, and they all say the car shows no errors when carrying out diagnostic checks, yet the error messages keep appearing after a few miles of driving. The ESC appears and disappears on the dashboard instrument cluster three times, then on the fourth, it stays. If I drive for a long period then an error for tyre pressure also appears.

Could be a flaky wheel speed sensor or ring causing intermittent gaps as all those are reliant on vehicle speed.

The Skoda garage said they sorted the wheel sensor, but the issue is still there.

Find a competent workshop... the ABS sensor is one of two components that measure wheel speed. The sensor is located at the wheel bearing where the ABS disc is integrated. In such cases, a diagnostic drive is performed to check the sensors and avoid replacing parts haphazardly.

If that was the problem, would it account for the parking sensor and start stop issues also?

It should do. If the car doesn’t know what the front wheels are doing, it won’t let you engage park pilot properly, etc.
