TBQH it's a lot of faff.

You can get the car to do it if you pay for the infotainment annual fee & suchlike on the Skoda App for iOS & Android respectively.

Otherwise you have some options:

1. https://updateportal.skoda-auto.com/ and select the area you need, download and put it on a memory stick and see if the system will update.
   

2. Use Waze which is very up to date as it's users update it regularly, it also has all types of speed cameras, roadworks and capability of reporting live issues

3. Use Google Maps which for very much the same reason as Waze, which it essentially is as Waze is owned by Google.
