I know 205/40/17 tyres are the ideal size to put on my fabia when fitting 17 inch alloys but is 215/40's going to cause bother when i lower it on eibach springs?

Not on eibach springs nope. I have the odd issue but I'm lowered about 45mm, and spaced out 15mm all round.
