Picking up my Scout on Thursday, seem to remember there was a way on the Golf to switch the central locking so that one press on 'unlock' unlocked all doors and the boot (default being drivers door only on first press and all doors on second press).

Glad to see the old trick of holding down the unlock open button drops all the windows, cool

If you have a Maxidot dashboard then you should be able to change it on there, otherwise it would be a change with VCDS or at the dealer.

Make sure the following is deselected (i.e has no small triangle to the left):

Convenience Settings > Door Open > Single Door

Not that I'm aware of, it's covered briefly on pages 19 & 23 of my user manual (2008MY).
