Will the calipers and carriers from a MK1 vRS work on the MK2?

I don't see why not? I'd assume they were the same but you'd need different discs on the Mk2 as it has a larger PCD

Can anyone else confirm, anyone done this?

I think the callipers are the same, but you might need a different carrier and certainly different discs.

Certainly the same pads are used in the front of a MK II VRS and a MK I VRS.

Something I would say though is that the rears are a whole different ball game.
