How easy would it be to swap outer door handles over as ive found some colour coded ones that i wouldnt mind buying. Obviously with the lock in mine etc. Would it be worth paying someone to do?

Its do-able, but hard work. The door carriers on some of the cars are riveted on too, so would be a bit fiddly.
