I have a Fabia Tdi PD (02) and an Octavia Tdi (00) and they both have different (valvoline) oils, the Octavia uses standard 505 00 and the Fabia uses 505 01 which is fully synthetic so you cannot mix the oils, do the Skoda mechanics agree ?

Why would you want to mix them? An oil doesn't have to be fully synthetic to meet spec VW 505 01. That oil must be used for the PD engine on fixed servicing but is also suitable for the SDI and TDI (non PD) engines. Alternatively you could buy a 505 00/505 01 oil which is also suitable for use in both your cars. Millers XFE-PD is such an oil, and so is Quantum PD Diesel.

505.01 would be fine for both engines but 505.00 can only be used in the Octavia which presumably has the older tdi engine rather than the pdi version.
