Does anyone know if the grey plastic door strips on the Octavia can be removed and colour coded?

The answer is yes. But you need to get someone who knows what he is doing, to paint them.

The strips will need to be preped and primed with a plastic primer to ensure the paint keys to the plastic.

Not exactly sure how the Octy strips come off but it will either be double sided tape and/or snap in clips. They will need to be warmed with a heat gun and carefully removed with a plastic scraper being careful not to damage the paint on the panels.
