I've ordereed my new Octy vRS.

Once I get it I'm probably going to be offered GAP insurance by Skoda.

Now I'll admit I like the idea of a "Back to Invoice" cover for 3-4 years, just in case of total loss.

Can anyone advise on GAP insurance companies?

You'd be better off with Vehicle replacement GAP (VRI) than Return to Invoice as if you have got it on 20% offer the cost to replace could be considerably more.
