Erm water temp light bleeped and flashed this morning. So checked the water and was a little below min, so topped up and then the light stopped flashing and stopped beeping. I'm guesiing there's a sensor letting me know its low, this right lol

Yup. Theres a common issue with them going off when the water isnt low, resulting in needing a new sensor, but yours sounds like its working as it should.
