I'd stick with 205/45 16 to be honest. No need to go wider.

165/40. Bring on the stretch look

Would I not see any benifits from going wider?

205 will give a square side to tyre as there the reccommended tyre size for rum width so a 185 will give a little stretch look and a 165 will give a massive stretch look but you'll have to remember your speedo will be miles out doing this
