As an auto-box driver for 45 years, I find the DSG box on my 2011 Fabia almost not fit for purpose. I refer to the well publisised problems that can be experienced when manuevering especially reversing up a hill or emerging from a side road when the throttle becomes disabled for a second or two with traffic bearing down. I understand this is due to the footbrake signal, and I am told VW refuse to modify it. Is there any way the footbrake input can be disabled?

I doubt it, the foot brake signal integrates with the CCM, ABS, Engine ECU and DSG box.

CCM for brake lights, ABS for traction control&ABS, Engine ECU for cruise control disengagement, DSG for the obvious lol

Disabling the foot brake would most likely disable them all. Sorry

I have the DSG and uphill reversing - yes, but not the pulling out of a side road issue you have mentioned.
