If I were that way inclined, is it an easy job?

Are they just stuck on with strong double sided tape/pads?

Any recommendations on how to do it without damaging the paintwork?

Please don't mention the pros and cons of leaving them on, I'm more than aware of the risks

Make sure to leave a few pictures here when you are done .

Get them as warm (not hot!) as possible and they should peel off.

Leaving the car with that side facing the sun works well as it warms up the panel, the glue and the strip so the latter is more flexible and gomes off easier once you get the heat gun out.
