Right we are due to get our VRS next month and whilst in the garage i asked about the servicing costs. The chap behind the counter said it was about?

Fabias are fixed

You can't choose on the Fabia VRS , dunno about the Octy.

See FAQ's via Guides tab , there is a specfic question on Fabia vRS variable servicing , this confirms that the vRS is fixed only (QG0).

Service options

Fabia - Fixed only

Octavia 1 - Fixed or Variable (but not on early models)

Octavia 2 - Fixed or Variable

Superb - Fixed or Variable.

Well it looks like the bloke in the skoda garage is talking sh**e, now thats new for someone who works in a garage.
