Hi guys, sorry if this has been covered before but I was just wondering what I should look out for when buying new wheels, obviously the pcd and that I'm fine with its the ET and offsets? Or are these the same things?

What does those thing do to the wheel or what can I not get away with running without spacers?

Et is offset, usually et35 on 17" fabia wheels but u can go into the 20's or less depending on height and tyre strech

The lower the offset number the further the wheels will stick out. 30-35 is about the best for a fabia

Do you reckon 7.5J fronts & 9J rears with an ET of 30 will be okay?

Yes assuming the tyres (at least the rears) have a slight stretch.. 205/40s will be perfect.. and 195/40s on the front to match the slight stretch :)
