So, I finally found the solution here. As described above, ensure you leave the mirror switch pointed to the L mirror (if you are RHD). This turns on the feature. Set your mirrors, save. Then put car in reverse, set your mirrors, save. Every time you go into reverse now it should remember the reverse setting.

However it wouldn’t always remember to go back to normal when I drove off: frustrating (same problem as OP).

The answer: the ECU needs to see 0 km/h for at least a half second. If you are one of those people that goes from R to D whilst even slightly rolling, the mirror will not return to normal. Reverse out of your driveway, stop the car dead, put it in D and when you drive away the mirror will return to normal every time.
