Advice for repairing stone chips please

There are a large number of stone ships on my bonnet. None seem to have penetrated the undercoat so I have purchased a touch up paint and lacquer set but what it the best method  of applying this? 

 

Do I dab in the paint to fill the chip leaving it slightly 'proud' and then polish that down before applying the lacquer? Or should I leave the paint below surface level and then fill will lacquer and then polish this flat? Or some other method? I have 20 or so to do so wish me luck!

Started tonight; this is going to be a long, long job.

there is also this method, which i eventually plan on using, thou seems pretty risky, haha!

I generally have a very steady hand, but even I'd be terrified of trying it that way. I'd certainly want a few scrap panels to test it on first.
