Wheel alignment - am I asking too much

You missed my point, you need to ensure the rack is central before doing anything with the alignment, and don't rely on the position of the steering wheel.

 

It has been known for steering wheels to be fitted a few splines out (and quite a few splines out), so if you adjust to the steering wheel position then the rack isn't central when driving straight ahead. This will cause havoc with the EPS as there is a 'dead' zone when the rack is central, which won't equate to straight ahead any more.

Ok, I see your point now. So first check that the length of the rods/position of the tie rod ends is equal on both sides.
