Was wondering if it's possible to change the image of the car in the 'Vehicle Status' ?

 

While I'm guessing its probably not, would be nice to have the image at least reflect the correct colour of the car.

Yes I've wondered that but luckily I go for silver cars 

You can always paste a sticker af another car over your infotainment menu.

I believe you can change the type of car, Saloon/Estate/VRS using OBD Eleven or VCDS but not the colour.

You can’t change the colour, it’s always that sort of washed out grey colour or white depending on firmware.

That's a shame! Should be a handy thing for Skoda to fix and would surely be appreciated by Skoda owners!
