I have a 2019 Octavia VRS 245 with 'adaptive LED headlights' 

I've never noticed anything change at all with the beam pattern at night or whilst cornering. 

They're always set to 'auto'. 

Am I missing something?

What is your driving mode set as? I think they're the same as the xenons, so if it's in ECO (certainly) and NORMAL (I think), then they don't move. They do move in VRS mode and if you've selected it in INDIVIDUAL mode.

They don't move as such. The LEDs light up / go out / go brighter(?) as required so very subtle effect. Look closely and you will see the nearside verge being lit up in some situations. Plenty of previous threads about this. 

I also have a 19 plate 245 Vrs. I think the beam is defined by your speed, under 30mph my lights spread wide and light up pavements the faster you go the longer the beam extends.

 

If you look into your headlights ( not lit of course ) there is a LED bulb which shines almost sideways and lights up the verges as stated above
