We have a 58 plate Fabia Estate 1.4tdi, at some time before we purchased I think someone fitted a new battery and messed up a lot of settings.

Reversing Sensors, Radio only on Fm, Controls on Steering Column oddities, etc. 
The car runs fine and we enjoy driving it any idea how to approach finding any answers?

you don't actually say what is wrong........apart from the FM issue, which replacing a battery could not possibly affect.

How can I check anything to get these items working, reverse sensor, reset spanner, none of the ways from dash or radio read out on screen works ?

Spanner is a service due remininder. can be reset.... this video should help

 

 

Reverse sensors, does it beep or anything at all ? ............if they are factory fitted items then the vehicle needs pluging in to diagnose the fault.

Check the fuse hasn't been pulled because the reversing sensors have malfunctioned.

...Also, if they sold it to you like that, has it actually GOT reverse sensors? The previous owner may have swapped bumpers with a used part with the sensors there but never fitted them up. They are not standard issue on this model, I believe. 

The spanner is usually easy enough to sort so don't fret yet... It does suggest though, that a service is due. I would be more concerned about making sure that has been done and the car has had fresh, correct grade oil and the filter done.
