Hello, trying to find out whether 185 65 15 will be suitable for my Fabia that has 195 55 15 tyres. Got a decent price on 4 Dunlop winter sport tyres.

No, they're much too tall, 185/65/14 would be ok, guessing you've been offered tyres from the more plentiful Golf based platforms out there, you're only about the millionth person to think of this.

 

They'll rub.

195/50/15 or 195/55/15 are both within manufacturer recommended specifications. As is 185/65/14 as @sepulchrave says. Additionally 205/45/16 works if running 16-inch alloy wheels.

Dunlop Winter Sport 5 isn't available in size 185/65R15.

They'll be an old set for a Golf or an A3 that you can't buy any more.

185/65R15 wasn't fitted to the Golf.

My A3 pepperpots came with that size fitted, I had to replace the whole lot with 195 50 15 because they were much too big.

Dude, seriously, buy the right size, there's a list in the handbook with the correct tyre pressures. The car is a Polo under the skin, not a Golf.
