Seems a bit extreme. Compared to 7.5Jx19 ET48, the edge of each rim will be moved out by 0.5" (12.7mm) + 10mm = 22.7mm

Moving each rim 22.7mm outwards, means the edges of the rims are spaced 45.4mm further apart which is almost 2".

It might be easy to badly kerb the rims when going through 6ft 6in (2 metre) width restrictions.

Fitting 225/35R20 to 8.5J rims stretches the sidewalls (see ETRTO chart below), making the ride harder and giving little to no protection to the rims from kerbing damage.

225/35R20 fitted to 8Jx20 ET41 rims from the Kodiaq would be less extreme.

Fitting Skoda rims, means that should you damage one and need a replacement, finding a replacement should be a lot easier than trying to source a single replacement aftermarket rim.

All Skoda rims have unique identifying numbers, ie. the OEM part number, making it easy to find a replacement should the need arise.

With the 8Jx20 Kodiaq rim, you could also consider 235/35R20. However, when you're pushing the limits in clearance, it would be prudent to just purchase two tyres first. That way you could try them on the front of the car and then the back of the car. If rubbing occurred on the front, 235/35R20 could be used on the rear with the slightly narrower 225/35R20 used on the front.

ETRTO approved rim widths for passenger car tyres
225/35 7.5-8.0-9.0
235/35 8.0-8.5-9.5
