(Hydraulic) Clutch Biting Point changed after brake fluid renewal ? Please help..

My daughter's Octi (17 reg Tsi 150,  1395 cc)  ( 34k miles, new to her 11.5 months ago so Skoda warranty running out) went in for a full service at a main dealer + brake fluid change end July. It came out with much a higher clutch biting point. Due to summer holidays and the garage having no spaces, it only went back to the garage today . They originally said that the change 'could be due to an air bubble' so they'd bleed it. Which they have done and the biting point is still way too high for her to be able to confidently control the car at junctions on hills which she never used to have problems with. She has now been told the higher bite point is due to normal 'wear and tear'. 

Question: I thought with hydraulic clutches they were meant to be self-adjusting? Can anyone confirm that and is there anything that can be done to get the biting point down again?

Question: What can we do? Because she can't drive the car comfortably now due to a  chronic back issue  impacting her leg - we searched high and low to find this car which until it's service was perfect in every way.
