I have everything ready to install but I'm worried that I can't do the coding

Does your car have a towing weight marked on the vehicle loading plate?

This plate is normally located on the off-side B pillar.

I'm worry about the coding as I tried to get a quote from skoda and they said is not compatible

It seems that you are being given incorrect advice. The VIN plate you have posted indicates that your vehicle is actually permitted to tow a braked trailer weighing up to 2,200kg, provided the rear axle weight of the towing vehicle does not exceed 1,140kg.

So you think I should just install the tow bar

I can't guarantee anything, but it was never a problem with my activations

If the towbar is not coded correctly into the vehicles system, stability assistance, rear lighting and any rear assistance devices will be affected - if you have rear collision avoidance, the vehicle will probably not allow you to reverse with the trailer attached.

It is questionable whether the trailer load is entered in the COC documents

I believe the VIN plate is the final deciding factor for whether vehicle can tow or not. In this case it definitely can. As OP is in UK, I'd suggest contact with a Forum member with VCDS for assistance with coding.

For us, only what is written in the coc papers counts

OPs status gives Essex as location - so in UK.

It does appear that the VIN plate is on a LHD vehicle, and one post is actually in German but if OP is in UK, towbar is permissible.

On the vin plate is showing the gross towing weight

They didn't give me any explanation why

I bought full towbar from another skoda Wiring is a bit difficult The book I have doesn't explain in details

I need to research more so I don't make any mistakes
