Because there isn't any. All remote commands are sent through CAN-bus.

MultiFunction steering wheel is the only way to remote control Stream or any other OEM radio.

Can-bus modem? I thought the can-bus signal has low and high voltage levels which when pulsed create the sending and receiving address' and data to be sent.

There are tons of can-bus specs when googled. I don't think Skoda can-bus protocol is any different from the standard.

I think the modulation is done inside the steering control module. The steering wheel doesn't have any kind of capability for that.

I'd try google if I were you, just to see if there's anything there explaining the can-bus protocol in VAG cars.

Yes it is. It's fixed to the underside of steering column. Small rectangle box. You can see it by removing the panels around the steering column.

I have to say that your idea sounds interesting but be warned that this is not your everyday electronics. Messing with the can-bus signaling you can mess the cars bus system completely.

If your competent in this field or feel competent enough then it shouldn't be any problem for you.
