Easiest Way To Convert DVD's?

I remember doing this once but I've forgotten how to do it. Been a long time since I've bothered with disks of any kind.

Basically I want to rip a DVD onto the computer using something like DVD Shrink and then convert it all into a single file type (AVI, Divx, etc). I did this once when I was using my PSP but I've forgotten how to do it.

My cousin wants to backup all his DVD's onto his computer and use the media centre on Windows 7. He's got loads of DVD's and want to make room in his living room.

Any ideas?

Obviously this is just a resource and I have nothing to do with the site or any actions you may decide to take.

I've ripped all my DVDs (only 350ish) and about 30 TV series box sets and used http://handbrake.fr/ to convert them all to mp4s for my media centre. Works well and is free.

How long is Handbrake supposed to take? Seem to be taking ages? Am I doing something wrong? Estimated time to completion is days not minutes!

What settings are you encoding to? It'll depend quite heavily on the hardware too, video encoding is quite taxing on processors.
