What else will I be able to do?

Cornering fogs can't be enabled on a 2006 Octavia can they?

Also, my housemate has a 2001 Audi S6, what kinda stuff will I be able to do on this? I assume not as much with it being an older CAN system?

I would personally save a backup of the scan in another location for a backup, emailing it to yourself or coping to a flash drive would be sufficient.

The 2001 Audi S6 will be limited due to the age and (lack of) diagnostic capability. You should be able to tweak the windows via remote and a few other minor modifications to that car:
